Cream Cheese and Olive Dip

Cream Cheese and Olive DipThe big game is tomorrow and you may be looking for a great dip to serve at your party. Well look no further.  If you’re an olive fan, you will love this dip!  And for a little kick, the cayenne pepper gives it some heat.  This is a super easy recipe to make… all you have to do is chop up olives and mix everything together.  In my playbook that is a game day winning recipe!  If I am hosting a party, I love making recipes like this where you mix everything together ahead of time and then all you have to do is get it out of the refrigerator right before the guests arrive.  Then just throw some crackers on a platter to finish off the presentation. So let’s get started so we are ready for the big game.

The ingredients you will need are olives, softened cream cheese, minced garlic in a jar, and cayenne pepper.

mixed dipNow refrigerate until you are ready to serve the dip.  Serve with your choice of crackers.  

Cream Cheese and Olive Dip

Ingredients

  • 7 oz. jar of green olives chopped into small pieces
  • 1/4 cup of minced garlic
  • 2 (12 oz.) tube of cream cheese
  • 1 teaspoon cayenne pepper

Instructions

  1. First scoop the softened cream cheese into a bowl. Then chop the olives into small pieces. Mix the olives into the cream cheese. Pour in the minced garlic and mix it in. Add the 1 teaspoon of cayenne pepper and mix it in. Now refrigerate until you are ready to serve the dip. Serve with your choice of crackers.

Cinnamon Raisin Cookies

cinnamon raisin cookies 2This is a delicious cookie that combines two of my favorite things: raisins and cinnamon!  It has a buttery flavor that you will love.  This recipe is an old favorite of mine.  It is one of the three cookie recipes that my sister and I would bake on snowy days when we were bored. We would make this cookie because it was easy to make and we usually had all of the ingredients on hand.  We would alternate between this recipe, Peanut Butter Cookies, and chocolate chip cookies.  My sister would spend all day trying to make the perfect chocolate chip cookie, which is something she still tries to do to this day.  You can tell this Cinnamon Raisin Cookie recipe takes me down memory lane, and after you make it you will see why. So let’s get out the ingredients, because you won’t want to miss out on this wonderful cookie.

You will need an egg, softened butter, brown sugar, vanilla, water, flour, baking soda, salt, cinnamon, and raisins.

Whipped up eggNow get out a large mixing bowl and add the softened butter and brown sugar.

adding vanillaStir the mixture until you have a smooth creamy batter and set the mixing bowl aside.  Measure the flour, baking soda, and salt in a separate bowl.

adding salt Pour about half of the flour mixture into the creamed sugar mixture and stir it in.

adding flour to sugar mixtureThen stir the second half of the flour into the batter.   Next measure and sprinkle the cinnamon over the batter and then stir it in.

dropping dough on cookie sheetBake in a 375 degree oven for 10-12 minutes.  Cool cookies on a wire rack.

  • 1 teaspoon vanilla
  • 2 tablespoons water
  • 1 1/2 cups of flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1/2 cup of raisins

Instructions

Mini-Rueben Sandwiches

Mini-Ruben-SandwichesThe big game is quickly approaching and that means it’s time for some appetizer recipes.  The first time I had these Mini-Reuben Sandwiches was over the holidays.  From the moment I tried these cute little sandwiches, I was hooked and I knew I had to make them.  They are the perfect appetizer for a crowd on game day.  Your guests will love the delectable flavor of the warm melted cheese and corned beef.  These little sandwiches will please the heartiest and the daintiest eaters at your party.  One of the great things about this appetizer is that they are easy to assemble, which means you won’t miss any of the game.  It only takes a couple minutes to make these sandwiches.  Then it’s off to the oven they go.  Before you know it they are ready to be served.

Here are the ingredients in this game day favorite.  Thousand Island dressing, a loaf of Cocktail Rye bread, sauerkraut, Swiss cheese, corned beef, and butter that is not pictured here.

Mini-Rueben Sandwiches

Ingredients

  • 1 bottle of Thousand Island dressing
  • 1 loaf of Cocktail Rye bread
  • 1 jar of sauerkraut
  • 1/2 pound of sliced Swiss cheese
  • 1 pound of sliced deli corned beef
  • 1/4 cup of butter

Instructions

  1. Butter 20 pieces of Cocktail Rye bread and place them on a foil lined baking sheet, butter side down. Next spread Thousand Island dressing on each piece. Then drain the sauerkraut and put 2 tablespoons on each piece. Pile the corned beef on each piece. Place a piece of Swiss cheese on each sandwich. Spread Thousand Island dressing on the top piece of bread and place it on each sandwich. Butter the top slice of bread for each sandwich. Bake in a 350 degree oven for 10 minutes.
