Today I am featuring a bar that will make your taste buds dance. They have a blueberry topping on a wonderfully buttery cake. And believe me, they are the perfect addition to any breakfast or brunch. This dessert was sitting on my counter for a few days and they passed the breakfast test, the afternoon snack, and dessert test too. Each bite is bursting with fruit flavor. You really need to try these, because you absolutely will not be disappointed. And if you like this blueberry version, you will love my Cherry Bar version that was their inspiration.
Preheat your oven to 350 degrees. Then soften 1 cup of butter in a bowl. When the butter is softened, mix in 1 3/4 cups of sugar.
In a separate bowl mix together the dry ingredients: 3 cups of flour, 1 1/2 teaspoons of baking powder, and 1/2 teaspoon of salt. Then slowly mix it together with the sugar mixture.
Spread it in a greased 11″x15″ inch jelly roll pan or a shallow baking pan.Spoon 1 can of blueberry pie filling on top of the batter.
While the bars are still warm, drizzle them with powdered sugar frosting.
To make this frosting, you need to combine 1 tablespoon of butter, 1/4 cup of milk, and 1 teaspoon of vanilla in a pan on the stove and heat until the butter is melted. Then in a bowl place the 2 cups of powdered sugar and slowly add the warm liquid to the powdered sugar one teaspoon at a time. This recipe makes quite a bit of frosting so you may have some left over.
Now you are ready to enjoy this bar for breakfast or an afternoon snack.
