Today I am featuring a bar that will make your taste buds dance. They have a blueberry topping on a wonderfully buttery cake. And believe me, they are the perfect addition to any breakfast or brunch. This dessert was sitting on my counter for a few days and they passed the breakfast test, the afternoon snack, and dessert test too. Each bite is bursting with fruit flavor. You really need to try these, because you absolutely will not be disappointed. And if you like this blueberry version, you will love my Cherry Bar version that was their inspiration. (more…)
Are you looking for the perfect breakfast pastry? Well here it is with all of it is flaky apple deliciousness. This apple turnover is so good your kids will want to get up early to eat breakfast. Put away the Pop Tarts. Forget about the Toaster Strudels. It’s time to get out the fresh apples and spices that will have your kids running for the dinning room table. Kids love the sweet, cinnamon goodness. And guess what…it’s easy to make. Odds are you will have most of the ingredients in your pantry. So let’s get baking.
Start by chopping your 2 cups of apples into small pieces.
Add 1/2 cup of sugar.
Then add 1 tablespoon of flour.
Next add 1/2 teaspoon of cinnamon.
1/8 teaspoon of nutmeg.
1/4 teaspoon of salt.
And 1 teaspoon of lemon juice.
Mix everything together.
Now open two 8 oz. packages of crescent rolls. Separate each triangle on a foil lined baking sheet and put two tablespoons of filling in the center of each crescent roll.
Fold over each triangle.
Now crimp the sides with a fork.
Bake in a 350 degree oven for 20 minutes.
Now for the frosting… combine the margarine, milk and vanilla in a pan on the stove and heat it until the margarine is melted. You want to heat up the liquid so you will have a smoother frosting.
In a bowl place 2 cups of powdered sugar.
Then add the warm liquid to the powdered sugar one tablespoon at a time.
Keep adding the warm liquid until it reaches this consistency. You may have to add a little more powdered sugar if it is too runny.
Now drizzle it over the warm apple turnovers.
Now they are ready to serve. Enjoy them for breakfast or with some ice cream as a dessert.

Looking to wow mom on Mother’s Day? One way to do that is with this muffin you can serve to her for breakfast or brunch on Mother’s Day! It’s packed with fresh blueberries and it has a sweet glaze that’s going to put a smile on your mom’s face. And attached at the end of this post is a free printable Mother’s Day gift tag. You can attach the tag to a special gift or a basket of muffins.
To make these muffins, you need to mix the dry ingredients first: mix the 1 3/4 cups of flour, the 1/3 cup sugar, the 2 teaspoons of baking powder, and 1/4 teaspoon salt. Once you are done mixing the dry ingredients, make a hole in the middle for the egg, milk, and oil.
In a bowl combine your beaten egg, 3/4 cup milk, and 1/4 cup oil. Now pour these ingredients into the center of the dry ingredients.
Now mix just until all ingredients are moistened. You don’t want to over mix your muffins. The batter should be lumpy. If you over mix the batter your muffins will be dense and tough.
Mix in your 6 oz. package of washed fresh blueberries (you could use frozen blueberries).
Lightly grease your muffin pan or line with paper cups. Fill each muffin cup 2/3 full. It will make 10-12 muffins. My batch made 10 muffins.
Bake in a 400 degree oven for 20 minutes or until they are golden brown. Now glaze the muffins with a frosting to add that special touch for Mother’s Day.
You can make the same frosting I used on my Cherry Bars, Powdered Sugar Frosting. Combine the margarine, milk, and vanilla in a pan on the stove and heat it until the margarine is melted. Then in a bowl place 2 cups of powdered sugar and add the warm liquid ingredients that you just heated on the stove to the powdered sugar one teaspoon at a time. This recipe makes a lot of frosting so you may have some left over.
