Blueberry Bars

 

blueberry bars 4Today I am featuring a bar that will make your taste buds dance. They have a blueberry topping on a wonderfully buttery cake.  And believe me, they are the perfect addition to any breakfast or brunch.  This dessert was sitting on my counter for a few days and they passed the breakfast test, the afternoon snack, and dessert test too.  Each bite is bursting with fruit flavor. You really need to try these, because you absolutely will not be disappointed.  And if you like this blueberry version, you will love my Cherry Bar version that was their inspiration.  (more…)

Baked French Toast

Looking for something to go with the Glazed Blueberry Muffins from Thursday’s post for your Mother’s Day Brunch?  Well look no further.  Now you can treat mom to Glazed Blueberry Muffins and Baked French Toast.  This is an easy recipe that you can put in the oven while you are making mom bacon and eggs to go with it.  This toast has a nice texture since it is made with french bread, and the toast has a delicious flavor that will make you want more after each bite.

First melt your 1/4 cup margarine and pour it into your 9″ x 13″ pan.

Whisk eggs, sugar, cinnamon, milk, and vanilla in a bowl.

Put the french bread slices in the mixture.  Let the bread absorb the mixture for about 30 seconds.  After the 30 seconds, flip the bread to absorb the mixture on the other side.

 Fit the slices in the pan on top of the melted butter.french toast 6

Bake in a 400 degree oven for 15 minutes on one side then flip each piece and bake for an additional 10 minutes on the second side.  You want each side to look golden brown. Then sprinkle with powdered sugar and serve with your favorite berries and syrup.
