Bacon, beans, and brown sugar… with these three ingredients you can’t go wrong. This Easy Baked Beans with Bacon dish is one of my mom’s recipes, and it happens to be one of my husband’s favorites. It is such an easy recipe to make that you wouldn’t think I could get it wrong, but I did. On Tuesday I made this recipe thinking I was all set to start writing my blog post about it, but on Wednesday when my husband went to eat the leftovers he said, “That doesn’t look right.” He was referring to the full strips of bacon I had put on top of the beans. So I called up my mom, and sure enough I found out that you need to cut the bacon into small pieces. The funny thing is my husband was actually happy about the mistake, because that meant I had to make a second batch of beans.
Now that I have this recipe corrected I can share it with you so you can serve it at all of your summer barbecues and picnics. Your guests will love the sweet and salty goodness of this dish. So get out the your bacon, baked beans, and brown sugar and let’s get cooking. But remember… don’t forget to cut up the bacon into bite sized pieces. I’m sure I will never forget again.
For this recipe you will need 4 (15 oz.) cans of pork and beans, 1/2 cup of brown sugar and 8 strips of bacon.
First drain the 4 cans of beans.
Then pour the drained beans into an 8″x 8″ baking dish and top it with a 1/2 cup of brown sugar.
Cut up the 8 slices of bacon and put them on the top of the beans.
Now bake the casserole in a 350 degree oven for 1 hour.
This is an easy pasta dish that’s simple, flavorful, and incredibly hearty. And, all you need is a few minutes to whip it up. With Easter quickly approaching this is the kind of creamy and cheesy side dish you will want to enjoy with your family. The kids will all cheer when they see macaroni and cheese on the table.
The adults will cheer too with the sharp cheddar flavor and hint of garlic. So move over Jello salad and deviled eggs the mac and cheese has come to Easter dinner and it’s going to be the star of the show. We should get cooking soon, because Easter is April 5th this year and it’s just 18 days away.
Start by cooking the macaroni according to the package directions making sure to salt the water as suggested by the package. This will make the noodles more flavorful. When the noodles are done, pour them in a greased baking dish. I used a 13″x9″ oval baking dish.
In a pan melt 1/4 of a cup of butter over medium heat.
When butter is melted, pull pan off the heat and mix in 2 1/2 tablespoons of flour to make a paste.
Now put the pan back on the heat and add 3 cups of milk stirring constantly.
When the milk is warm, stir in the 2 cups of sharp cheddar cheese, 1/2 cup of Parmesan cheese, 1 teaspoon of minced garlic, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper.
Cook on low stirring constantly until the cheese is melted and the sauce becomes a little thick. Then pour sauce over the cooked macaroni in the dish and stir it around to mix it in.
Sprinkle the top with 1/4 cup of your favorite bread crumbs and 1/4 teaspoon paprika.
Bake in a 350 degree oven for 30 minutes. Then let it sit for a few minutes before serving and it will thicken a little bit as it cools off. Now sit back and enjoy this yummy mac and cheese with the whole family.

Tomorrow is Thanksgiving and one of my favorite parts of the meal is stuffing. So, I couldn’t resist having an excuse to make a big pan of it before Thanksgiving. This stuffing recipe is filled with apples and sausage, which give it an amazing amount of flavor. It’s the night before Thanksgiving so let’s get cooking!
Start by melting 5 tablespoons of butter in a large pot.
Add half of an onion to the butter and cook until tender. Then add your sausage and cook until it is no linger pink. Season with the 1 teaspoon of salt, 1 teaspoon of sage, and 1/2 teaspoon of pepper.
Add the 2 cups of chicken broth and heat to a boil.
Remove from the heat and add your stuffing and chopped apples. Then lightly mix until all of the stuffing is moistened.
Pour the stuffing into a greased casserole dish.
Cover with foil.
Bake for 30 minutes in a 350 degree oven.
Now you have a delicious stuffing for Thanksgiving. Happy Thanksgiving!

These are the best dinner rolls that I have ever had! That’s what my niece said when she ate five of these rolls last Friday for an after school snack. I asked her how she would describe the roll. She said awesome, moist, and the best in the world! Her description didn’t surprise me since this is another recipe from my Grandma Dow who was a wonderful baker, and cook. To start, mix the following ingredients to create the yeast mixture in a bowl: 1/2 cup warm water (temp. the water to 100-110 degrees), 1 tablespoon of sugar, and 2 tablespoons of yeast (or two packages). Stir it in the bowl until just mixed and then let it sit for 10 minutes. It will foam up quite a bit. The reason you check the temperature of the water is to make sure that it is not too warm so it does not kill the yeast, but that it is warm enough to activate it.
This is what it looks like after 10 minutes.
Next, on the stovetop in a saucepan you can make your butter mixture. You warm 2 cups of milk, 1/2 cup of softened butter, 1/2 cup of sugar (with it heaping in the cup) and 1 teaspoon of salt. Heat the mixture until warm about 100-110 degrees.
After your yeast mixture has sat for 10 min (it will be foamed up) and your butter mixture is warm, stir the two together in a mixer with dough hooks.
Now beat two eggs in a bowl and pour them in your mixer and mix until combined.
Now it is time to add the flour to your mixture. Slowly add 8 cups of flour, mixing as you add the flour.
After the dough is throughly mixed, put it into a large butter greased bowl and flip the dough around so the butter gets on all the sides of the dough.
Cover the bowl with a clean dish cloth and put the bowl with dough in it in a warm spot in your kitchen and let it rise for 1 hour or more. After the hour has passed, the dough will have rose up in the bowl like this.
Knock the dough down. That means use your hands and hit the air out of the dough.
Sprinkle some flour on your counter and set the dough on the counter. Then you can start forming the rolls with your hand. Roll the dough into 1 1/2 inch size balls and set them on a greased cookie sheet to rise.
Let the dough rise one hour or more in a warm spot until the rolls are light. They will look like this.
Bake the rolls in an oven preheated to 375 degrees for 10-12 minutes. When the rolls are done, they will be golden brown.
When I made this recipe, it made 48 rolls, but if you make your rolls a little bigger it will make a few less. Now you are ready to impress your family and friends with your homemade rolls. If you have a few leftover, you can always freeze them and heat them up later. Enjoy!
