Peanut Butter Cookies

If you’re looking for a great peanut butter cookie recipe, here’s one you should try. This recipe makes twenty soft, thin and flavorful cookies that would make a great gift to someone for the holidays.  These cookies are easy to make and odds are you have all of the ingredients in your cupboard.  So let’s get out the peanut butter and whip up a batch of this delicious cookie.

Get out a large mixing bowl and put in the 1/2 cup of softened butter.   You need to set the butter out on the counter for at least an hour before you start the cookies. Then put in the 1/2 cup of smooth peanut butter and mix them together.

 Next pour in the 1/2 cup of granulated sugar.

 Add the 1/2 cup of brown sugar.  Cream the sugar into the peanut butter mixture.

eggMix in the 1/2 teaspoon of vanilla.

vanillaNow set the bowl with the peanut butter mixture to the side and get out a new bowl to mix the dry ingredients in.  Measure the flour, the salt, and the baking soda into the bowl.

mixing in flourFor each cookie, scoop out a spoonful of batter onto a cookie sheet that has been greased or has parchment on it.  Leave lots of room around each cookie, because they will spread out.  Note: If you use parchment, the cookies spread out less leaving the cookies a little thicker than if you have a grease cookie sheet.

Before you put the cookies in the oven, mark them with the back of a fork.  Make criss-cross marks on each cookie.

Now let the cookies bake for 10-12 minutes in a 350 degree oven.  The cookies spread out when cooked and they end up very flat.  When they come out of the oven, they will be very soft so let them cool on the pan for a little bit before transfering them to a wire rack.  In the two pictures below you can see how they spread out more on a greased pan and how they spread out less on parchment paper.

Sausage and Apple Stuffing

 

Sausage and apple stuffing 1Tomorrow is Thanksgiving and one of my favorite parts of the meal is stuffing.  So, I couldn’t resist having an excuse to make a big pan of it before Thanksgiving. This stuffing recipe is filled with apples and sausage, which give it an amazing amount of flavor.  It’s the night before Thanksgiving so let’s get cooking!

Start by melting 5 tablespoons of butter in a large pot.

butter for stuffingAdd half of an onion to the butter and cook until tender. Then add your sausage and cook until it is no linger pink. Season with the 1 teaspoon of salt, 1 teaspoon of sage, and 1/2 teaspoon of pepper.

adding broth for stuffingRemove from the heat and add your stuffing and chopped apples.  Then lightly mix until all of the stuffing is moistened.

Bake for 30 minutes in a 350 degree oven.

Sausage and Apple Stuffing

Ingredients

  • 1/2 of an onion
  • 1/2 pound of ground pork sausage
  • 2 apples peeled and chopped
  • 2 cups of chicken broth
  • 1 teaspoon sage
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (12-14 oz) package of cubed stuffing (you can use flavored stuffing I used Sage and Onion)

Instructions

  1. Start by melting 5 tablespoons of butter in a large pot. Add half of an onion to the butter and cook until tender. Then add your sausage and cook until it is no linger pink. Season with the 1 teaspoon of salt, 1 teaspoon of sage, and 1/2 teaspoon of pepper. Add the 2 cups of chicken broth and heat to a boil. Remove from the heat and add your stuffing and chopped apples. Then lightly mix until all of the stuffing is moistened. Pour the stuffing into a greased casserole dish. Cover with foil. Bake for 30 minutes in a 350 degree oven.

Grandma Dow’s Homemade Rolls

Grandma Dow's Homemade rollsThese are the best dinner rolls that I have ever had!  That’s what my niece said when she ate five of these rolls last Friday for an after school snack.  I asked her how she would describe the roll.  She said awesome, moist, and the best in the world!  Her description didn’t surprise me since this is another recipe from my Grandma Dow who was a wonderful baker, and cook.  This recipe is made with the same ingredients as Grandma Dow’s Cinnamon Rolls.  You just leave out the cinnamon and sugar. Looking to amaze your guests on Thanksgiving? Then this is the recipe for you.

To start, mix the following ingredients to create the yeast mixture in a bowl: 1/2 cup warm water (temp. the water to 100-110 degrees), 1 tablespoon of sugar, and 2 tablespoons of yeast (or two packages). Stir it in the bowl until just mixed and then let it sit for 10 minutes. It will foam up quite a bit. The reason you check the temperature of the water is to make sure that it is not too warm so it does not kill the yeast, but that it is warm enough to activate it.

yeastNext, on the stovetop in a saucepan you can make your butter mixture.  You warm 2 cups of milk, 1/2 cup of softened butter, 1/2 cup of sugar (with it heaping in the cup) and 1 teaspoon of salt.  Heat the mixture until warm about 100-110 degrees.

butter mixtureAfter your yeast mixture has sat for 10 min (it will be foamed up) and your butter mixture is warm, stir the two together in a mixer with dough hooks.

butter and yeast mixture Now beat two eggs in a bowl and pour them in your mixer and mix until combined.

eggNow it is time to add the flour to your mixture. Slowly add 8 cups of flour, mixing as you add the flour.

adding flourAfter the dough is throughly mixed, put it into a large butter greased bowl and flip the dough around so the butter gets on all the sides of the dough. 

dough ready for first riseCover the bowl with a clean dish cloth and put the bowl with dough in it in a warm spot in your kitchen and let it rise for 1 hour or more. After the hour has passed, the dough will have rose up in the bowl like this. 

dough 2Knock the dough down. That means use your hands and hit the air out of the dough.  

knock downSprinkle some flour on your counter and set the dough on the counter. Then you can start forming the rolls with your hand. Roll the dough into 1 1/2 inch size balls and set them on a greased cookie sheet to rise.

dough after second riseBake the rolls in an oven preheated to 375 degrees for 10-12 minutes. When the rolls are done, they will be golden brown.

cooked doughWhen I made this recipe, it made 48 rolls, but if you make your rolls a little bigger it will make a few less. Now you are ready to impress your family and friends with your homemade rolls.  If you have a few leftover, you can always freeze them and heat them up later. Enjoy!
