Garlic Mashed Potato Casserole

Well look no further, I have that perfect creamy, garlicky mashed potato recipe for you to take.  Let’s just say having potatoes topped with bacon alone will get you cheers from everyone at the party!  Everyone including my husband. He loves bacon!  Anytime I include it in a recipe he is excited.  He was happy when I made Easy Baked Beans with Bacon, Twice Baked Potatoes with Bacon, and Bacon-Wrapped Beef Filets. This recipe has the perfect blend of bacon, garlic, mashed potatoes, and cheese that will make you the culinary hero at any party.  So get out your potatoes and let’s start cooking..

close up of casseroleFirst prepare the 8 slices of bacon in the microwave or the oven according to the package directions. When bacon is cooked set it aside. Then peel and quarter 5 lbs. (around 11 potatoes) of potatoes and place them in a pot and fill it with water so it just covers the potatoes. Now let the potatoes come to a boil and boil them for 20 minutes.

potatoes in water Drain the potatoes and place them in a mixer.

potatoes in the mixerAdd 1 (8 oz.) package of softened cream cheese and 4 tablespoons of butter.

adding milkNext sprinkle in 2 teaspoons of dried parsley and 1/2 teaspoon of garlic powder. Now mix the potatoes until they are smooth and everything is combined.

bacon and cheese toppingCover with aluminum foil and bake at 350 degrees for 30 minutes. Uncover and bake for 10 more minutes or until the cheese is melted.

  • 1/2 teaspoon of garlic powder
  • 1 cup of shredded Cheddar Cheese
  • 8 slices of bacon (cooked until crisp and crumbled)

Instructions

Easy Baked Beans with Bacon

baed beans with bacon 4Bacon, beans, and brown sugar… with these three ingredients you can’t go wrong.  This Easy Baked Beans with Bacon dish is one of my mom’s recipes, and it happens to be one of my husband’s favorites.  It is such an easy recipe to make that you wouldn’t think I could get it wrong, but I did.  On Tuesday I made this recipe thinking I was all set to start writing my blog post about it, but on Wednesday when my husband went to eat the leftovers he said, “That doesn’t look right.” He was referring to the full strips of bacon I had put on top of the beans.  So I called up my mom, and sure enough I found out that you need to cut the bacon into small pieces.  The funny thing is my husband was actually happy about the mistake, because that meant I had to make a second batch of beans. 

baked beans 1Now that I have this recipe corrected I can share it with you so you can serve it at all of your summer barbecues and picnics.  Your guests will love the sweet and salty goodness of this dish.  So get out the your bacon, baked beans, and brown sugar and let’s get cooking.  But remember… don’t forget to cut up the bacon into bite sized pieces.  I’m sure I will never forget again.

  • 1/2 cup of brown sugar
  • 8 strips of bacon

Instructions

  1. First drain the 4 cans of beans.
  2. Then pour the drained beans into an 8"x 8" baking dish and top it with a 1/2 cup of brown sugar.
  3. Cut up the 8 slices of bacon and put them on the top of the beans.
  4. Now bake the casserole in a 350 degree oven for 1 hour.
